Yes, that's the purpose of having separeted test and production sites.
Even once the production site is online, the test site is kept as a
way for you to continue testing changes there if needed, before pushing
them onto production.

Simply create a DNS CNAME resource pointing to conferences.mongueurs.net.
In Bind config speak, that would be:

  workshop.granada.pm  IN CNAME conferences.mongueurs.net.

Then, once it's created and has propagated (which usually requires
about 24 hours), I configure a virtual host on the conference site.
